Dry Ingredients:
½ cup raw almonds
½ cup raw pecans
1 cup raw walnuts
2 cups oats
1 cup raw pumpkin seeds
1 cup hemp hearts or seeds
½ cup chia seeds
Wet Ingredients:
1 cup melted coconut oil
1 ½ teaspoon vanilla
½ cup maple syrup
2 pinches sea salt
Other Ingredients:
1 cup dried wild blueberries
1 cup unsweetened coconut flakes
Steps
Preheat oven to 250°F (120°C).
Lightly chop almonds, pecans, and walnuts in a food processor.
Add the chopped nuts, oats, pumpkin seeds, hemp hearts, and chia seeds to a large mixing bowl and stir to combine.
In a separate bowl, whisk together the melted coconut oil, vanilla, maple syrup, and sea salt until smooth.
Slowly pour the wet mixture into the dry ingredients, stirring until everything is evenly coated.
Line one or two baking sheets with parchment paper and spread the granola mixture out evenly in a thin layer.
Bake for 35 minutes, then remove from the oven.
Add the dried blueberries and coconut flakes to the granola. Gently toss if needed but avoid over-mixing to keep clusters intact.
Return to the oven and bake for another 25 minutes.
Remove from the oven and let the granola cool completely before breaking into clusters and storing in an airtight container.
